ok, ok, so I'm not a full on vegan... Dutch and I have been indulging in meat or dairy about once a week. But I am happy to share that Scott has been without his medication for days now with no problems. yes!!!!!!!!!
Here are two of my new favorite vegan snacks
-organic rolled oats
honey (some vegans don't eat honey)
crushed organic walnuts
sliced organic banana
orgainc hemp milk
-two slices of sesame ezekiel bread
grape seed vegenaise
sliced organic cucumbers
yumm!

Week 2
So, we are going on our second week, yea! I have to admit that I did have some meat and cheese last week... let me explain. We had potato and ham soup frozen so rather than through it out Dutch and I ate it. Also, I had half of a grilled cheese sandwich that Dutch didn't finish. It was good but not good enough to switch me back over to the dark side. ; )
My main thought for this week is that I am now understanding the addictive nature of high calorie and fat foods. It's interesting. When I'm not feeling so hot my mind goes to bread, meat, and cheese. I think it is that endorphin rush I'm really craving. I'm also feeling that we are coming up with some great meal ideas. It's can be difficult at first but there are tons of options. I'm open to suggestions if anyone has some!!!!

Day 5
This change has been so much easier than I had expected. I feel awesome! I feel full of energy and much lighter. The kids are both doing very well. Dutch has had no issue with the change. We haven't cut him off entirely from meat and dairy however, we have just cut him way back. We figure when he is old enough to understand he can make his own decision about it. Jupiter is sleeping better!!! I can only guess, but I think it's because I have no dairy in my diet.
I feel like we have been coming up with great meal ideas. We have been trying not to use any of those fake meat substitutes because they are processed foods just like any other. West Soy does make a seitan that we made with potatoes and it was awesome. I haven't had many cravings, still feeling very committed. Happy veganism!! : )

Day 1-2

First, I feel that I should start by why explaining I have chosen to become a vegan. So... I love to watch Ellen while the kids sleep. : ) Ellen has spoken on her show about becoming a vegan and how much better she feels physically and emotionally from it. Also, Scott and I like to watch documentaries. Lately there have been a lot of them based on food related issues. Most all of them conclude that eating animal based products is destroying our health and our environment. Also, I am a crazy animal lover. Eating meat and dairy products never felt "good" to me, I have just always been told it was the "right" thing to do. I believe that this has major positive karmic values as well as physical ones.
The first day was filled with so many happy and exciting emotions! Grocery shopping had never felt so good. Scott and I eat very well, so switching to vegan is not a huge adjustment, we are already about 75% there. I feel so empowered to know that I don't HAVE to eat animal products to be healthy, in fact it is just the opposite.
Today has been day two and it has been ok. I have felt less bloated. There has been no change in energy level. However, I have felt a bit light headed and have some muscle soreness. (who knows if that is from getting up to nurse Jupiter 3-5 times a night or the detox happening) ; ) I should also mention that I have seen no change in my milk supply and Jupiter seems to be doing just fine with the change.
